So this week I decided to experiment with a recipe for squash bread. The result was a moist, delicious bread that everyone loved. With the seasons changing, I am being challenged to try new recipes, which is exciting for me and the kids at SoulShine.
Here is my Squash Bread Recipe:
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons ground cinnamon
3 eggs (beaten)
1 cup vegetable oil
2 1/4 cups sugar
3 teaspoon vanilla extra
2 cups grated yellow squash
Sift flour, salt, baking powder, baking soda, and cinnamon.
Beat eggs, oil, vanilla, and sugar.
Add sifted ingredients to wet ingredients then stir in squash.
Fill two 8.5 X 4.5 loaf pans.
Bake at 325 degrees for 50- 55 minutes.
Enjoy! This recipe also freezes well.
